Our Take On Food
The Eldred Country Restaurant believes that every meal we cook reflects our passion for life. Every culture, race and religion throughout history has attached a great importance to the feasts, its means of celebration and self-expression. In America, we are fortunate to be surrounded by such diversity of cultures, which offers us a vast array of cuisines to use in creating our menus. The food we prepare, like the country in which we live, becomes a study in holding extremes delicately in balance but always with the utmost respect for tradition, simplicity and fresh ingredients. We have adapted classic dishes to suit the needs of an increasingly health conscious clientele who seek a cuisine that is not too rich, yet still retains all of its essential elements of seasonings; it's soul.
Our food is made with the best ingredients we can find in our area: cultivated plants grown from heirloom seeds; wild-harvested leaves, flowers, barks and roots; local fish, seaweeds and coastal grasses; pastured meat, poultry and eggs from small farmers. These are the flavors of place.
The process of finding ingredients and transforming them into cuisine are not separate events, but one continuous action, constantly informed by cultural expectations and new ideas. We brine, cure and smoke, as cooks have been doing for thousands of years, but we also embrace modern cooking techniques. Our dishes are animated by flavors and textures both familiar and strange.
